I’m so excited to be writing my first blog post after it took forever to get my blog up and running.
I have a very simple and delicious recipe to share with you guys that is surprisingly vegan!
I originally came up with this recipe for some cupcakes I made for my best friend’s birthday(who was vegan at the time) and everyone loved them. I recently tried making them into donuts by adjusting the recipe a little and decided that they are much better this way! However, you will need a donut pan to make these and I got mine here.
If you don’t like cinnamon, omit the cinnamon in the batter and don’t make the cinnamon swirl, however I don’t recommend it since you would truly be missing out.
These donuts will impress everyone and they won’t even have to know how simple they are!
Cinnamon Swirl Donuts
- 1 2/3 cups All-Purpose Flour
- 3/4 cup White Granulated Sugar
- 1 1/2 tsp Cinnamon
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 2/3 cup Nut Milk of Choice (I prefer Unsweetened Almond Milk)
- 1/3 cup Coconut Oil, Melted
- 1/2 tsp Pure Vanilla Extract
- 2 tsp Apple Cider Vinegar*
- 2 tbsp Coconut Oil, Melted
- 1 tbsp Cinnamon
- 2 tbsp White Granulated Sugar
Preheat the oven to 350 F (180 C) and grease a donut pan with melted coconut oil.
Start making the donut batter by whisking together all of the dry ingredients in a large bowl.
Make a well in the middle of the dry ingredients and add the wet ingredients into the well. Gently mix the wet ingredients into the dry ingredients with a spatula until all of the ingredients are incorporated.
Pour the donut batter into the greased donut pan, making sure it is only filled 2/3 of the way since they will rise.
Start making the cinnamon swirl by mixing all of it's ingredients into a small bowl.
Drizzle the cinnamon swirl mixture onto the donut batter and swirl it around using a toothpick or small knife to create a swirling pattern.
Bake the donuts for around 18-20 mins or until they are slightly golden.
Flip the donuts out of the pan and allow them to cool on a baking rack for at least 10 minutes before serving. Enjoy!
*You can use regular white vinegar if you don't have apple cider vinegar just make sure that it is vegan if you're vegan.
